Our cool cellars house a range of stainless steel tanks ranging from 10hl to 170hl in capacity, in which we carry out the alcoholic fermentation, as well as the maceration and subsequent malolactic fermentation, which converts the harsher malic acid in the wine into softer, rounder lactic acid.

For the aging of the Chianti Classico we use French oak barrels of 10hl to 20hl capacity. We reserve a special area for smaller barrels – 500-litre tonneaux and 228-litre barriques, made by Francois Frères, where our post precious wines are left to age in perfect tranquillity.

Throughout the cellars, we play Mozart music gently in the background.
